There was a time when a kid’s birthday party wasn’t a ‘real party’ unless chocolate crackles were invited. While there are a few variations these days, you can’t go past the original recipe. Make up a batch and enjoy the chocolatey crunch!

How to make chocolate crackles: key tips

It doesn’t get much easier than tossing all the ingredients into a bowl and stirring them to combine. However, my advice would be to stir gently so that you don’t “smash” the puffed rice, stir fairly quickly so that the copha doesn’t set before you’ve combined everything (especially on cold days), and be sure to stir long enough that all the puffed rice becomes well-coated.

This recipe calls for Rice Bubbles, but you can use any brand of puffed rice cereal you like. Choose a good-quality cocoa powder for the most chocolatey flavour, and sift it into the bowl with the other ingredients to prevent unwanted lumps.

Melted copha is the ingredient that binds everything together. It is essentially coconut oil that has been treated (hydrogenated) so that it can withstand higher temperatures, meaning it won’t melt at room temperatures below 35°C, making it perfect for treats like chocolate crackles.

Ingredients

  • 4 cups Rice Bubbles
  • 1 cup icing sugar
  • 1 cup desiccated coconut
  • 5 tbs cocoa powder
  • 250 g copha melted

Method

  • Step 1
    Mix all ingredients together, spoon mixture into patty cake papers and refrigerate until set.

How do I melt copha for chocolate crackles?

You can either place the copha in a saucepan and gently melt it over a low heat, or place it in a heatproof jug in the microwave and heat in 30 second bursts, stirring in between, until smooth. 

How do I store chocolate crackles?

These are best kept in an airtight container in the fridge, and will last up to 5 days. However, they will also do well in the pantry for a couple of days, provided it’s cool.
