A very rich and decadent, yet easy to make chocolate cheesecake that is perfect for a night in with your best friends and a good movie.
Ingredients
- 250 g cream cheese room temperature
- 395 g condensed milk
- 1 cup thickened cream
- 100 g butter melted
- 250 g Arnott's milk coffee biscuits
- 200 g Lindt chocolate
- 200 g Lindt 70% cocoa dark chocolate
- 1/4 cup dark rum
Method

Step 1In a food processor, add biscuits and process until fine.

Step 2Add melted butter through funnel of processor whilst running.

Step 3Press into the bottom of a lightly greased and lined spring form cake tin.

Step 4Bake at 180C for approximately 10 minutes. Set aside.

Step 5Melt dark chocolate in a glass measuring cup or bowl in the microwave for about 40 seconds.

Step 6Add the milk chocolate and microwave a further minute, stir and return for another 10-20 seconds if it isn't fully melted, until smooth. Do not overheat. Cool slightly.

Step 7Place cream cheese and condensed milk in a large mixer bowl and beat until combined.

Step 8Increase mixer speed to high and whilst blending, add thickened cream and alcohol (or coffee). Slowly add melted chocolate whilst mixing and incorporate well. Beat until mixture is smooth and lightened in colour.

Step 9Pour into base and refrigerate for at least 4-6 hours before serving.
Recipe Notes
I use a combination of Lindt milk and dark chocolate with Milk Coffee biscuits.
I also use either dark rum or Cointreau, or for a coffee flavour, try 1 tsp instant coffee in a little boiling water.
Best made the day before as the flavours become richer overnight.
You can decorate this with chocolate flakes, strawberries, blueberries, a dusting of cocoa or whatever takes your fancy.
