Ingredients

  • 250 g self-raising flour
  • 120 g unsalted butter
  • 120 g soft brown sugar
  • 1 egg yolk
  • 2 tbs honey
  • 2 tsp orange zested

Icing

  • 225 g icing sugar
  • 3 tbs orange juice

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Sieve the flour and rub the butter into the flour, until it resembles breadcrumbs.
  • Step 3
    Using a table knife stir in sugar, orange zest, honey and egg into the flour and butter mixture, until the mixture starts to come together in lumps.
  • Step 4
    Form a ball of dough, briefly knead the dough and then lightly flour work surface.
  • Step 5
    Roll the dough into a log about 5 cm in diameter and 10 cm long.
  • Step 6
    Wrap the log in glad wrap and chill it for 1½ hours.
  • Step 7
    Lightly grease the baking paper, slice the log into thin discs and place on baking paper.
  • Step 8
    Bake for 7-9 minutes. Remove biscuits from oven, allow to set. Cool.
  • Step 9
    Beat icing sugar and orange juice until they form a smooth paste.
  • Step 10
    Carefully transfer the biscuits to a cooling rack, put the icing into a piping bag, then drizzle over the cool biscuits in your favorite patterns.
Recipe Notes
You can use lemon and lemon zest, or grapefruit or kiwi fruit for a change.
