A delicious and easy recipe, which you can vary the amount of chilli to how you like it.
Ingredients
- 1 kg raw prawns deveined peeled
- 2 tbs sweet chilli sauce
- 3 tbs soy sauce
- 2 tbs lime juice
- 1 garlic clove large
- 1 tsp ginger finely chopped
- 1 tbs vegetable oil
- 1 bunch spring onions sliced trimmed
- 200 ml coconut milk
- 1/3 cup water
- 1 cup desiccated coconut
- 20 snow peas
- 1 lime juiced
- 2 tsp sambal oelek
- 1 pinch salt *to taste
Method

Step 1In a large bowl, mix together Thai sweet chilli sauce, lime juice, soy sauce, garlic and ginger.

Step 2Marinate the prawns in the mixture for at least 20 minutes.

Step 3Stir fry the shallots quickly for one minute.

Step 4Add the prawns and marinade mixture, and cook until prawns change colour.

Step 5Add the coconut milk, water and coconut, and mix through.

Step 6Stir in the snowpeas.

Step 7Stir in the sambal oelek and lime juice to balance the sweetness.

Step 8Serve hot with steamed rice.
Recipe Notes
You can easily add other vegetables as well. It works well with a garnish of chopped fresh coriander and some mangoes.
Sambal oelek can be substituted with 2 small red chillis.
