Ingredients

  • 1 kg raw prawns deveined peeled
  • 2 tbs sweet chilli sauce
  • 3 tbs soy sauce
  • 2 tbs lime juice
  • 1 garlic clove large
  • 1 tsp ginger finely chopped
  • 1 tbs vegetable oil
  • 1 bunch spring onions sliced trimmed
  • 200 ml coconut milk
  • 1/3 cup water
  • 1 cup desiccated coconut
  • 20 snow peas
  • 1 lime juiced
  • 2 tsp sambal oelek
  • 1 pinch salt *to taste

Method

  • Step 1
    In a large bowl, mix together Thai sweet chilli sauce, lime juice, soy sauce, garlic and ginger.
  • Step 2
    Marinate the prawns in the mixture for at least 20 minutes.
  • Step 3
    Stir fry the shallots quickly for one minute.
  • Step 4
    Add the prawns and marinade mixture, and cook until prawns change colour.
  • Step 5
    Add the coconut milk, water and coconut, and mix through.

    Stir in the snowpeas.
  • Step 7
    Stir in the sambal oelek and lime juice to balance the sweetness.
  • Step 8
    Serve hot with steamed rice.
Recipe Notes

You can easily add other vegetables as well. It works well with a garnish of chopped fresh coriander and some mangoes.

Sambal oelek can be substituted with 2 small red chillis.
