A healthy, yummy meal that is quick and easy to prepare.
Ingredients
- 2 carrot chopped medium
- 6 button mushrooms diced
- 1 zucchini chopped
- 1/2 red onion chopped
- 1 potato diced
- 250 g pumpkin diced
- 1 cup shallots chopped
- 1 garlic clove
- 1 corncob
- 420 g canned cream of chicken soup
- 100 g chicken breast fillet shredded
- 2 tbs chicken stock powder
- 4 cup hot water
Method

Step 1Dilute chicken stock into water. Bring water and stock to the boil.

Step 2Strip corn cob into kernels. Add all ingredients except chicken. Bring to boil.

Step 3Simmer until vegetables are nearly cooked.

Step 4Add soup. Simmer for 5 minutes.

Step 5Add chicken. Simmer for a further 2 minutes.

Step 6Add salt and pepper to taste.
