Ingredients

  • 2 carrot chopped medium
  • 6 button mushrooms diced
  • 1 zucchini chopped
  • 1/2 red onion chopped
  • 1 potato diced
  • 250 g pumpkin diced
  • 1 cup shallots chopped
  • 1 garlic clove
  • 1 corncob
  • 420 g canned cream of chicken soup
  • 100 g chicken breast fillet shredded
  • 2 tbs chicken stock powder
  • 4 cup hot water

Method

  • Step 1
    Dilute chicken stock into water. Bring water and stock to the boil.
  • Step 2
    Strip corn cob into kernels. Add all ingredients except chicken. Bring to boil.
  • Step 3
    Simmer until vegetables are nearly cooked.
  • Step 4
    Add soup. Simmer for 5 minutes.
  • Step 5
    Add chicken. Simmer for a further 2 minutes.
  • Step 6
    Add salt and pepper to taste.
Recipe Notes

Serve with buttered toast.
