Ingredients

  • 2 chicken breast fillet
  • 4 tbs plain flour
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1 egg beaten
  • 1 olive oil spray

Method

  • Step 1
    Dice chicken into nuggets, or half if making burgers.
  • Step 2
    Mix flour and spices.
  • Step 3
    Coat chicken pieces in flour mix, shake off excess.
  • Step 4
    Dip chicken in egg.
  • Step 5
    Re-coat chicken in flour mix.
  • Step 6
    Lay on baking tray and spray with olive oil.
  • Step 7
    Bake at 200C for 10-30 minutes, depending on size of chicken pieces, turning once.
Recipe Notes
Add some cayenne or chilli powder to spice it up a bit.
