A delicious meal my mum made up one night which I now make regularly.
Ingredients
- 500 g chicken thighs
- 1 cup frozen peas
- 1 brown onion chopped
- 2 tsp garlic minced
- 2 potato chopped medium
- 3 bacon rashers
- 1 cup mushrooms chopped
- 420 g canned cream of mushroom soup
- 2 cup pumpkin chopped
- 2 carrot sliced
- 1/4 cup skim milk
Method

Step 1Microwave carrot, pumpkin and potato until tender.

Step 2Stir fry the chicken with the garlic and onion until chicken has browned. Add bacon.

Step 3Add the cream of mushroom soup, add skim milk while stirring until sauce reaches desired consistency.

Step 4Stir in pumpkin, potato, carrot and peas.

Step 5Stir until heated through and serve with rice.
Recipe Notes
Any vegetables can be added to substituted to this recipe such as sweet potato instead of pumpkin, or extra bacon can be used.
