Something tasty and a little bit different.
Ingredients
- 2 chicken breast fillet large sliced
- 2 sheets puff pastry
- 1 tsp oil
- 6 short-cut bacon rashers
- 200 g mozzarella
- 1 tbs butter
- 1/2 tsp basil
Method

Step 1Preheat oven to 170C and grease muffin trays well with oil.

Step 2Cut pastry sheets into 4 squares and line muffin tray.

Step 3Place in the oven for a few minutes to stop the pastry from getting soggy at the bottom.

Step 4Slice the chicken breasts, add a rash of bacon to the bottom of each pastry casing and enough chicken to ¾ fill it.

Step 5Bake for about 20 minutes or until chicken is almost cooked through.

Step 6While chicken is baking, combine oil, mozzarella, butter, basil and pepper in a food processor and process until it becomes a sticky, crumbly mixture.

Step 7Divide into 6 portions and add to chicken. Bake a further 10 minutes until cheese is melted.
