Any fussy kid or husband will like this!
Ingredients
- 500 g chicken schnitzel
- 60 g butter
- 1 onion chopped large
- 2 shallots chopped
- 2 garlic clove crushed
- 1 1/2 tbs plain flour
- 470 g canned diced tomato
- 2 tsp chicken stock powder
- 1 tsp Worcestershire sauce
- 1/2 tsp paprika
- 1 tsp sugar
- 1/2 tsp basil
- 1/2 tsp pepper
- 1 tbs parsley chopped
- 125 g mozzarella
- 2 tbs parmesan cheese grated
Method

Step 1Heat 30 g butter in pan and cook meat until golden brown.

Step 2Remove from pan and drain well.

Step 3In the same pan, heat remaining butter.

Step 4Add onions, shallots and garlic. Sauté until onions are tender.

Step 5Add flour and stir until golden brown. Remove from heat.

Step 6Add tomatoes, stock, sauce, paprika, sugar, basil and pepper.

Step 7Return to heat and stir until mixture boils and thickens.

Step 8Reduce heat, cover and simmer 5-10 minutes. Stir in parsley.

Step 9Place meat in an oven proof dish.

Step 10Pour sauce over meat.

Step 11Sprinkle mozzarella and Parmesan cheese over top of sauce.

Step 12Bake at 180C, uncovered, for 30 minutes.

Recipe Notes
I use ready-crumbed schnitzels. Chicken or veal pieces are fine.
