An very easy dessert.
Ingredients
- 1 cup self-raising flour
- 1/2 tsp ground cinnamon
- 2 tbs brown sugar
- 30 g butter
- 1 egg lightly beaten
- 1/4 cup milk
- 1 apple large peeled quartered thinly sliced
- 2 tbs lemon juice
- 2 passionfruit
- 1/4 cup apricot jam
Method

Step 1Sift flour, cinnamon and brown sugar together in bowl. Rub in butter.

Step 2Add combined milk and egg and mix to a soft dough.

Step 3Press dough into greased 16 cm x 26 cm lamington pan.

Step 4Arrange apple in slightly overlapping layers over dough. Brush apple with lemon juice.

Step 5Stir passionfruit pulp into apricot jam and spread evenly over apple slices.

Step 6Bake at 180C for about 30 minutes or until golden brown.

Step 7Serve warm with cream or ice cream.
