A quick and easy lunch in the summertime.
Ingredients
- 2 cups pasta uncooked
- 5 eggs boiled cut into quarters
- 1 green capsicum sliced
- 1 cup whole-egg mayonnaise
- 500 g barbecued cooked chicken cut into small pieces
- 1 can red kidney beans rinsed
- 3/4 cup shallots finely sliced
- 120 g ham thinly sliced
- 6 sweet and sour cucumbers diced
- 1 pinch salt *to season
- 1 pinch pepper *to taste
Method

Step 1Cook the pasta according to packet instructions, then place into a large bowl. Add all remaining ingredients. Keep some egg to garnish.

Step 2Gently mix together. Taste and season with salt and pepper.

Step 3Serve cold or at room temperature.
