Ingredients

  • 2 cups pasta uncooked
  • 5 eggs boiled cut into quarters
  • 1 green capsicum sliced
  • 1 cup whole-egg mayonnaise
  • 500 g barbecued cooked chicken cut into small pieces
  • 1 can red kidney beans rinsed
  • 3/4 cup shallots finely sliced
  • 120 g ham thinly sliced
  • 6 sweet and sour cucumbers diced
  • 1 pinch salt *to season
  • 1 pinch pepper *to taste

Method

  • Step 1
    Cook the pasta according to packet instructions, then place into a large bowl. Add all remaining ingredients. Keep some egg to garnish.
  • Step 2
    Gently mix together. Taste and season with salt and pepper.
  • Step 3
    Serve cold or at room temperature.
