Chicken Breasts with Paprika and Tomato Sauce

Ingredients

  • 4 chicken breast fillet
  • 1 tbs chives *to decorate

Sauce

  • 3 tomato ripe skin off
  • 2 tsp olive oil
  • 1 onion chopped small
  • 1 garlic clove crushed
  • 1 tbs paprika
  • 1/2 tsp dried thyme
  • 1 capsicum large seeded thinly sliced

Method

  • Step 1
    Heat oil and cook onion, covered for 2-3 minutes. Add garlic, paprika and thyme, cook a further 1 minute.
  • Step 2
    Add capsicum and tomatoes. Cook for 10 minutes or until soft. Puree the mixture until smooth.
  • Step 3
    While the sauce is cooking, place chicken on a preheated lightly greased BBQ grill. Cook for 6-8 minutes, or until chicken is cooked, turning once.
  • Step 4
    Serve the chicken breast on top of the sauce and garnish with chives.

Equipment

  • 1 chargrill pan
Recipe Notes
To skin tomoatoes, pour boiling water over tomatoes, leave for 1 minute, then plunge in cold water; remove the skin and dice roughly. Serve with a tossed salad, with chips, rice or pasta of choice.
