Trust us, you'll love the salty, savoury flavour Vegemite gives to our homemade pork sausage rolls.
Ingredients
- 450g pork sausages casings removed
- 1 carrot small peeled coarsely grated
- 1/2 brown onion coarsely grated
- 1/3 cup panko breadcrumbs
- 2 eggs
- 3/4 cup mozzarella
- 2 tbs Vegemite room temperature
- 2 sheets frozen puff pastry just thawed
- 1 bottle tomato sauce *to serve
Method

Step 1Place the sausages, carrot, onion, breadcrumbs and one of the eggs in a large bowl. Use your hands to mix until combined.

Step 2Add the Vegemite and cheese to the sausage mixture and mix until well combined.

Step 3Preheat oven to 200C/180C fan-forced. Line 2 baking trays with baking paper. Lightly whisk the remaining egg in a bowl.

Step 4Cut the pastry sheets in half. Place a quarter of the mince mixture along the centre of each piece of pastry. Brush the long edge of the pastry with the whisked egg. Fold pastry over filling, pressing to seal. Cut each roll into 5 pieces.

Step 5Place the rolls, seam side down onto the prepared trays. Brush the pastry with egg. Use a small sharp knife to lightly score the tops a few times to allow the steam to escape.

Step 6Bake for 20-25 minutes or until cooked through and golden. Serve with tomato sauce, if desired.
