Nice as a finger food.
Ingredients
- 3 cup arborio rice cooked
- 1 egg lightly beaten
- 1 egg yolks
- 1/4 cup rice flour
- 2 garlic clove crushed
- 1 cup cheese grated
- 1/2 cup parmesan cheese grated
- 1/4 cup chives chopped
- 1 pinch salt and pepper
- 2 cup fresh breadcrumbs
- 1 cm vegetable oil
- 1 tomato chutney *to serve
Method

Step 1Place the rice, egg , egg yolk, rice flour, garlic, cheddar, parmesan, chives, salt and pepper in a bowl and mix well to combine.

Step 2Shape ¼ cupfuls of mixture into patties and press into breadcrumbs to coat.

Step 3Heat 1 cm of oil in a frying pan over medium heat.

Step 4Cook the patties in batches, 2-3 minutes on each side or until golden and crispy.

Step 5Drain on absorbent paper. Serve with tomato chutney.
Recipe Notes
Other types of medium rice can be used. You'll find them in your supermarket. One cup of rice yields 3 cups cooked rice. Combine 1 cup arborio rice to 1½ cups water in a sauce pan over high heat. Bring to boil. Reduce heat to low. Cover and cook for 15 minutes. Remove from heat and stand, covered for 15 minutes.
