Ingredients

  • 3 cup arborio rice cooked
  • 1 egg lightly beaten
  • 1 egg yolks
  • 1/4 cup rice flour
  • 2 garlic clove crushed
  • 1 cup cheese grated
  • 1/2 cup parmesan cheese grated
  • 1/4 cup chives chopped
  • 1 pinch salt and pepper
  • 2 cup fresh breadcrumbs
  • 1 cm vegetable oil
  • 1 tomato chutney *to serve

Method

  • Step 1
    Place the rice, egg , egg yolk, rice flour, garlic, cheddar, parmesan, chives, salt and pepper in a bowl and mix well to combine.
  • Step 2
    Shape ¼ cupfuls of mixture into patties and press into breadcrumbs to coat.
  • Step 3
    Heat 1 cm of oil in a frying pan over medium heat.
  • Step 4
    Cook the patties in batches, 2-3 minutes on each side or until golden and crispy.
  • Step 5
    Drain on absorbent paper. Serve with tomato chutney.
Recipe Notes
Other types of medium rice can be used. You'll find them in your supermarket. One cup of rice yields 3 cups cooked rice. Combine 1 cup arborio rice to 1½ cups water in a sauce pan over high heat. Bring to boil. Reduce heat to low. Cover and cook for 15 minutes. Remove from heat and stand, covered for 15 minutes.
