A tasty variation on baked potatoes.
Ingredients
- 4 potato
- 1 tbs oil
- 1 cup whole chicken chopped cooked
- 1/4 red capsicum diced
- 1/4 green capsicum diced
- 1 chicken stock cube
- 1/3 cup mayonnaise
- 40 g butter melted
- 2 tbs fresh chives chopped
- 1/2 cup tasty cheese grated
- 1/4 tsp paprika
- 1 onion diced
Method

Step 1Scrub and dry potatoes. Prick all over with a fork.

Step 2Place potatoes on an oven tray and bake until soft, approximately 1 hour at 180C.

Step 3Remove and cut potatoes in half, lengthwise.

Step 4Scoop out the pulp, leaving a 5 mm shell.

Step 5Place potatoes on a tray and brush inside and out with oil. Bake in a hot oven for 10 minutes, then remove.

Step 6Mash potato pulp in bowl. Add chicken, capsicum, stock cube, mayonnaise, butter and onion.

Step 7Spoon mixture into potato shells. Sprinkle with cheese, chives and paprika.

Step 8Bake at 180C for approximately 15 minutes or until lightly browned.
