Ingredients

  • 4 potato
  • 1 tbs oil
  • 1 cup whole chicken chopped cooked
  • 1/4 red capsicum diced
  • 1/4 green capsicum diced
  • 1 chicken stock cube
  • 1/3 cup mayonnaise
  • 40 g butter melted
  • 2 tbs fresh chives chopped
  • 1/2 cup tasty cheese grated
  • 1/4 tsp paprika
  • 1 onion diced

Method

  • Step 1
    Scrub and dry potatoes. Prick all over with a fork.
  • Step 2
    Place potatoes on an oven tray and bake until soft, approximately 1 hour at 180C.
  • Step 3
    Remove and cut potatoes in half, lengthwise.
  • Step 4
    Scoop out the pulp, leaving a 5 mm shell.
  • Step 5
    Place potatoes on a tray and brush inside and out with oil. Bake in a hot oven for 10 minutes, then remove.
  • Step 6
    Mash potato pulp in bowl. Add chicken, capsicum, stock cube, mayonnaise, butter and onion.
  • Step 7
    Spoon mixture into potato shells. Sprinkle with cheese, chives and paprika.
  • Step 8
    Bake at 180C for approximately 15 minutes or until lightly browned.
