Great for kid's lunch boxes for something different.
Ingredients
- 1 cooking oil spray
- 125 g short-cut bacon rashers diced
- 1 3/4 cup self-raising flour
- 2 cup extra tasty cheddar cheese grated
- 1 1/2 cup milk
- 1 egg
- 60 g butter melted
- 125 g corn cob kernels drained
Method

Step 1Preheat oven 200C. Grease a muffin tray.

Step 2Fry bacon in a non stick frying pan for 3 minutes until crisp. Cool.

Step 3Sift flour into a bowl, add cheese and stir to combine.

Step 4Whisk milk, egg and butter together. Add to flour with corn and bacon and mix quickly and lightly together.

Step 5Place mixture in tray.

Step 6Bake for 20 minutes until golden. Cool on wire rack.

- 1 12-hole muffin pan
Recipe Notes
Adjust flavourings to taste. These are nice made with chicken or grated carrot.
