Ingredients

  • 1 cooking oil spray
  • 125 g short-cut bacon rashers diced
  • 1 3/4 cup self-raising flour
  • 2 cup extra tasty cheddar cheese grated
  • 1 1/2 cup milk
  • 1 egg
  • 60 g butter melted
  • 125 g corn cob kernels drained

Method

  • Step 1
    Preheat oven 200C. Grease a muffin tray.
  • Step 2
    Fry bacon in a non stick frying pan for 3 minutes until crisp. Cool.
  • Step 3
    Sift flour into a bowl, add cheese and stir to combine.

  • Step 4
    Whisk milk, egg and butter together. Add to flour with corn and bacon and mix quickly and lightly together.
  • Step 5
    Place mixture in tray.
  • Step 6
    Bake for 20 minutes until golden. Cool on wire rack.

Equipment

  • 1 12-hole muffin pan
Recipe Notes

Adjust flavourings to taste. These are nice made with chicken or grated carrot.
