Ingredients

  • 1 cup self-raising flour
  • 1/2 cup plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 3/4 cup vegetable oil
  • 1/2 cup golden syrup
  • 3 egg
  • 1 tsp vanilla essence
  • 2 carrot grated medium
  • 3/4 cup sultanas
  • 3/4 cup walnuts chopped
  • 1 part walnuts *to decorate

Icing

  • 250 g spreadable cream cheese
  • 1/2 cup icing sugar mixture
  • 1/2 tsp vanilla essence
  • 1 tsp milk

Method

  • Step 1
    Preheat oven to 170°C/150°C fan-forced. Grease a 6cm-deep, 20cm round cake pan. Line base and sides with baking paper.
  • Step 2
    Sift flours, bicarbonate of soda and cinnamon into a large bowl. Whisk sugar, oil, golden syrup, eggs and vanilla in a large bowl. Add to flour mixture. Stir until just combined. Stir in carrot, sultanas and walnuts. Pour mixture into prepared pan.
  • Step 3
    Bake for 1 hour to 1 hour 10 minutes or until golden and a skewer inserted into centre of cake comes out clean. Stand in pan for 10 minutes. Turn, top-side up, onto a wire rack. Cool completely.
  • Step 4
    Make icing Combine all ingredients together until smooth. Spread over top of cake. Decorate with extra walnuts. Serve.

Allow extra time for cooling.
