Ingredients
- 1 cup self-raising flour
- 1/2 cup plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp ground cinnamon
- 1/2 cup brown sugar
- 3/4 cup vegetable oil
- 1/2 cup golden syrup
- 3 egg
- 1 tsp vanilla essence
- 2 carrot grated medium
- 3/4 cup sultanas
- 3/4 cup walnuts chopped
- 1 part walnuts *to decorate
Icing
- 250 g spreadable cream cheese
- 1/2 cup icing sugar mixture
- 1/2 tsp vanilla essence
- 1 tsp milk

Step 1Preheat oven to 170°C/150°C fan-forced. Grease a 6cm-deep, 20cm round cake pan. Line base and sides with baking paper.

Step 2Sift flours, bicarbonate of soda and cinnamon into a large bowl. Whisk sugar, oil, golden syrup, eggs and vanilla in a large bowl. Add to flour mixture. Stir until just combined. Stir in carrot, sultanas and walnuts. Pour mixture into prepared pan.

Step 3Bake for 1 hour to 1 hour 10 minutes or until golden and a skewer inserted into centre of cake comes out clean. Stand in pan for 10 minutes. Turn, top-side up, onto a wire rack. Cool completely.

Step 4Make icing Combine all ingredients together until smooth. Spread over top of cake. Decorate with extra walnuts. Serve.
