Ingredients

  • 1 tbs olive oil *to grease
  • 2 carrots grated peeled
  • 1 cup self-raising flour
  • 1/2 cup plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 3/4 cup oil
  • 1/2 cup golden syrup
  • 3 eggs
  • 1 tsp vanilla essence
  • 3/4 cup walnuts
  • 3/4 cup sultanas

Icing

  • 250 g cream cheese
  • 1/2 cup icing sugar
  • 1/2 tsp vanilla essence
  • 1 tsp buttermilk
  • 3/4 cup walnuts *to decorate

Method

  • Step 1
    Preheat oven to 170C. Grease a 20cm round cake pan lightly with oil and line with non-stick baking paper.
  • Step 2
    Cake batter: Sift the flours, bicarbonate of soda and cinnamon into a large bowl.

    Place the brown sugar, oil, golden syrup, eggs and vanilla in a separate bowl and whisk until combined.
  • Step 4
    Pour the oil mixture into the dry ingredients and stir gently with a wooden spoon until just combined. Stir in the grated carrot, sultanas and walnuts.
  • Step 5
    Pour the mixture into the pan and bake for approximately 1 hour.
  • Step 6
    Set aside for 5 minutes before turning out onto a wire rack to cool completely.
  • Step 7
    Icing: Place cream cheese, icing sugar, buttermilk and vanilla in a bowl and mix well with a wooden spoon until smooth.
  • Step 8
    Spread icing over cake.
  • Step 9
    Decorate with walnuts.
Recipe Notes

I always leave the cake to sit overnight in the refrigerator before eating. Tastes delicious!
