The moistest and most delicious carrot cake you will ever bake!
Ingredients
- 1 tbs olive oil *to grease
- 2 carrots grated peeled
- 1 cup self-raising flour
- 1/2 cup plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp ground cinnamon
- 1/2 cup brown sugar
- 3/4 cup oil
- 1/2 cup golden syrup
- 3 eggs
- 1 tsp vanilla essence
- 3/4 cup walnuts
- 3/4 cup sultanas
Icing
- 250 g cream cheese
- 1/2 cup icing sugar
- 1/2 tsp vanilla essence
- 1 tsp buttermilk
- 3/4 cup walnuts *to decorate
Method

Step 1Preheat oven to 170C. Grease a 20cm round cake pan lightly with oil and line with non-stick baking paper.

Step 2Cake batter: Sift the flours, bicarbonate of soda and cinnamon into a large bowl.

Step 3Place the brown sugar, oil, golden syrup, eggs and vanilla in a separate bowl and whisk until combined.

Step 4Pour the oil mixture into the dry ingredients and stir gently with a wooden spoon until just combined. Stir in the grated carrot, sultanas and walnuts.

Step 5Pour the mixture into the pan and bake for approximately 1 hour.

Step 6Set aside for 5 minutes before turning out onto a wire rack to cool completely.

Step 7Icing: Place cream cheese, icing sugar, buttermilk and vanilla in a bowl and mix well with a wooden spoon until smooth.

Step 8Spread icing over cake.

Step 9Decorate with walnuts.
Recipe Notes
I always leave the cake to sit overnight in the refrigerator before eating. Tastes delicious!
