A very quick and easy nice tasting biscuit to make.
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1 egg beaten
- 1 cup carrot mashed
- 1 tsp vanilla essence
- 1 cup brown sugar
- 2 cup plain flour
- 1 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 3/4 cup raisins
Method

Step 1Preheat oven to 180C. Lightly grease oven tray.

Step 2Cream butter and sugar, add egg, carrot puree, vanilla and stir.

Step 3Sift all dry ingredients together. Add to first mixture, stir until smooth then stir in raisins.

Step 4Place spoonfuls(spoon size depends on the size of biscuits you require)on baking tray and bake for 15 minutes.
Recipe Notes
You can ice the biscuits with a mixture of orange juice, icing sugar and a little butter. Stir until creamy.
