Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 egg beaten
  • 1 cup carrot mashed
  • 1 tsp vanilla essence
  • 1 cup brown sugar
  • 2 cup plain flour
  • 1 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 3/4 cup raisins

Method

  • Step 1
    Preheat oven to 180C. Lightly grease oven tray.
  • Step 2
    Cream butter and sugar, add egg, carrot puree, vanilla and stir.
  • Step 3
    Sift all dry ingredients together. Add to first mixture, stir until smooth then stir in raisins.
  • Step 4
    Place spoonfuls(spoon size depends on the size of biscuits you require)on baking tray and bake for 15 minutes.
Recipe Notes
You can ice the biscuits with a mixture of orange juice, icing sugar and a little butter. Stir until creamy.
