Ingredients

  • 1 egg
  • 1 banana mashed ripe
  • 1/4 cup buttermilk
  • 2 cups self-raising flour
  • 1/2 cup brown sugar
  • 1/3 cup soft butter
  • 1/4 cup pecans chopped optional

Method

  • Step 1
    Beat the egg with a fork and add to the mashed banana.
  • Step 2
    Mix in buttermilk.
  • Step 3
    Add flour to form a slightly firm dough (add more milk if required).
  • Step 4
    Roll dough into a 25 x 30 cm rectangle.
  • Step 5
    Combine brown sugar and butter together by hand and spread over the dough.
  • Step 6
    Sprinkle with chopped pecan nuts if desired.
  • Step 7
    Roll dough up, lengthways, to make a sausage shape.
  • Step 8
    Cut into 2 cm slices and place cut side up, and side by side into a greased round tin.
  • Step 9
    Bake at 180C for approximately 30 minutes.
