Easy to make, great for lunch or a quick snack, a great way to get the kids to eat some extra vegetables too.
Ingredients
- 4 flour tortillas
- 1 carrot finely grated small
- 125 g canned corn drained
- 95 g canned tuna drained
- 1/2 red capsicum finely chopped small
- 2 spring onion thinly sliced
- 1 cup cheese grated
- 1 tbs mayonnaise
- 1 tbs olive oil
Method

Step 1Add vegetables, tuna and mayonnaise in a bowl and mix to combine. Adjust mayonnaise quantity if required.

Step 2Place some tuna mixture on one tortilla, enough to cover, then top with grated cheese.

Step 3Top with another tortilla. Pan fry in some olive oil for 2-3 minutes per side or until browned.

Step 4Cut into triangles or strips.

Step 5Serve with sour cream and / or guacamole, if desired.
Recipe Notes
The amounts of ingredients I've added fills 2 tortillas, but you can increase or decrease amounts as needed. You can substitute tuna for cooked shredded chicken or any leftover meat. Substitute other vegetables of choice.
