This is my favourite Cajun-style spice to make. It's quick and goes well with "braai" (barbecue) steaks, chicken, fish, anything that you want.
Ingredients
- 1 tsp salt
- 2 tsp garlic powder
- 2 1/2 tsp paprika
- 1 tsp ground black pepper
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 1/4 tsp dried oregano
- 1 1/4 tsp dried thyme
- 1/2 tsp red chilli flakes
Method

Step 1Mix all ingredients together.

Step 2Cajun steaks: Soak steaks in red wine vinegar for a few minutes, coat with cajun spice just before cooking.

Step 3Cajun fish: Add the spice to lemon juice and marinate fish before pan grilling or pan frying

Step 4Cajun chicken: Cut slits in chicken pieces, rub a little spice into the cuts, coat with more spice and white wine vinegar

Step 5Add 2 teaspoons mayonnaise for every serving portion of chicken, rub over chicken and allow to rest in marinade. Leave overnight if desired.

Step 6Cook as desired.
Recipe Notes
Go easy on the salt, the rest of the ingredients can be adapted for a herbal salt so you may want to decrease the salt amount, to your personal taste.
