A favourite slice that I have been making for more than 30 years. It has three layers, a base, cherry coconut centre and chocolate top. - Maysie

Ingredients

  • 125 g butter
  • 1 tbs drinking chocolate powder
  • 1/2 cup icing sugar
  • 1 cup plain flour

Filling

  • 395 g sweetened condensed milk
  • 1/2 cup glace cherries chopped
  • 1 1/2 cups coconut
  • 1 tsp cochineal

Top

  • 125 g dark chocolate
  • 60 g butter

Method

  • Step 1
    Base: Melt butter with drinking chocolate in saucepan. Remove from heat, add icing sugar and flour.
  • Step 2
    Mix and press into a lamington tray which has been lined with foil or baking paper.
  • Step 3
    Bake at 160C for 10 minutes.
  • Step 4
    Filling: Blend filling ingredients together and spread over base. Bake for approximately 20 minutes until set.
  • Step 5
    Allow to cool.
  • Step 6
    Top: Spread with combined melted chocolate and butter.
Recipe Notes
Store the slice in the fridge but it is nicer eaten at room temperature.
