A favourite slice that I have been making for more than 30 years. It has three layers, a base, cherry coconut centre and chocolate top.
Ingredients
- 125 g butter
- 1 tbs drinking chocolate powder
- 1/2 cup icing sugar
- 1 cup plain flour
Filling
- 395 g sweetened condensed milk
- 1/2 cup glace cherries chopped
- 1 1/2 cups coconut
- 1 tsp cochineal
Top
- 125 g dark chocolate
- 60 g butter
Method

Step 1Base: Melt butter with drinking chocolate in saucepan. Remove from heat, add icing sugar and flour.

Step 2Mix and press into a lamington tray which has been lined with foil or baking paper.

Step 3Bake at 160C for 10 minutes.

Step 4Filling: Blend filling ingredients together and spread over base. Bake for approximately 20 minutes until set.

Step 5Allow to cool.

Step 6Top: Spread with combined melted chocolate and butter.
Recipe Notes
Store the slice in the fridge but it is nicer eaten at room temperature.
