Ingredients

  • 2 cup self-raising flour
  • 1/2 cup plain flour
  • 1/4 tsp bicarbonate of soda
  • 3/4 cup brown sugar tightly packed
  • 2 tbs golden syrup
  • 1 1/4 cup buttermilk
  • 90 g unsalted butter melted
  • 1 egg lightly beaten

Method

  • Step 1
    Preheat oven to 180°C and grease a 12 hole, 125 mL capacity muffin pan with cooking spray.
  • Step 2
    Sift flours and soda into a large bowl and stir in sugar. Combine well.

    Whisk buttermilk and golden syrup until dissolved, then add to melted butter and egg. Whisk well.
  • Step 4
    Add to flour, mix until only just combined. Do not over-mix.
  • Step 5
    Divide mixture evenly between muffin pans until three-quarters full.
  • Step 6
    Bake for 20 minutes or until golden in colour and cooked when tested.
  • Step 7
    Cool for 5 minutes then turn out onto a wire cake rack.

  • 1 12-hole muffin pan
Recipe Notes

You can use soured milk (mixture of milk and yoghurt) as a buttermilk substitute. As a dessert, serve with chocolate, caramel or lemon sauce.
