Lovely tea-time treats.
Ingredients
- 2 cup self-raising flour
- 1/2 cup plain flour
- 1/4 tsp bicarbonate of soda
- 3/4 cup brown sugar tightly packed
- 2 tbs golden syrup
- 1 1/4 cup buttermilk
- 90 g unsalted butter melted
- 1 egg lightly beaten
Method

Step 1Preheat oven to 180°C and grease a 12 hole, 125 mL capacity muffin pan with cooking spray.

Step 2Sift flours and soda into a large bowl and stir in sugar. Combine well.

Step 3Whisk buttermilk and golden syrup until dissolved, then add to melted butter and egg. Whisk well.

Step 4Add to flour, mix until only just combined. Do not over-mix.

Step 5Divide mixture evenly between muffin pans until three-quarters full.

Step 6Bake for 20 minutes or until golden in colour and cooked when tested.

Step 7Cool for 5 minutes then turn out onto a wire cake rack.

- 1 12-hole muffin pan
Recipe Notes
You can use soured milk (mixture of milk and yoghurt) as a buttermilk substitute. As a dessert, serve with chocolate, caramel or lemon sauce.
