A delicious fettuccine dish that doesn't need cream!
Ingredients
- 650 g skin-off chicken breast fillet cooked thinly sliced
- 500 g fettuccine
- 2 tbs olive oil
- 1 1/2 tbs garlic minced
- 250 g mushrooms sliced
- 1/2 red onion thinly sliced
- 1/2 cup white wine
- 1/2 cup chicken stock (liquid)
- 2 tomato seeded thinly sliced
- 1 tbs basil
- 3 tbs butter
- 1 tsp salt and pepper
Method

Step 1Add pasta to a large saucepan of boiling water and cook on medium heat.

Step 2While the pasta is boiling, heat the olive oil in a large frypan and sauté the garlic for a few seconds.

Step 3Add onion and mushrooms and sauté a further few minutes.

Step 4Add wine to the frypan and cook until the liquid has reduced by half.

Step 5Add the prepared chicken stock and again cook until the liquid has reduced by half.

Step 6Add the tomatoes, basil and cooked chicken and sauté for approximately 1-2 minutes, or until thoroughly heated through.

Step 7Stir through the butter, season with salt and pepper and then combine with the cooked pasta.
Recipe Notes
Garnish with Parmesan cheese and finely chopped spring onions.
