No-Cream Chicken Fettuccine

A delicious fettuccine dish that doesn't need cream!

Ingredients

  • 650 g skin-off chicken breast fillet cooked thinly sliced
  • 500 g fettuccine
  • 2 tbs olive oil
  • 1 1/2 tbs garlic minced
  • 250 g mushrooms sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup white wine
  • 1/2 cup chicken stock (liquid)
  • 2 tomato seeded thinly sliced
  • 1 tbs basil
  • 3 tbs butter
  • 1 tsp salt and pepper

Method

  • Step 1
    Add pasta to a large saucepan of boiling water and cook on medium heat.

  • Step 2
    While the pasta is boiling, heat the olive oil in a large frypan and sauté the garlic for a few seconds.
  • Step 3
    Add onion and mushrooms and sauté a further few minutes.
  • Step 4
    Add wine to the frypan and cook until the liquid has reduced by half.
  • Step 5
    Add the prepared chicken stock and again cook until the liquid has reduced by half.
  • Step 6
    Add the tomatoes, basil and cooked chicken and sauté for approximately 1-2 minutes, or until thoroughly heated through.
  • Step 7
    Stir through the butter, season with salt and pepper and then combine with the cooked pasta.
Recipe Notes

Garnish with Parmesan cheese and finely chopped spring onions.
