A simple and delicous side dish with lots of flavour.
Ingredients
- 500 g Brussels sprouts
- 1/4 cup pine nuts
- 1/4 cup flaked almonds
- 2 tbs Nuttelex sunflower margarine
- 1/2 tsp nutmeg
- 1 tsp caraway seeds
- 1 pinch sea salt and cracked pepper *to taste
Method

Step 1Prepare the Brussels sprouts. Remove the first layer of leaves and cut in half (if you like).

Step 2Bring a saucepan of water to the boil. Add salt and the prepared Brussels sprouts. Cook for 5 - 8 minutes. Drain and set aside.

Step 3Whilst the Brussels sprouts are cooking, heat a frying pan and add the pine nuts and almonds (without any oil in the pan) and roast until golden brown. Stir and don't let it burn! When ready, set aside.

Step 4Add the margarine into the heated frying pan and add the Brussels sprouts, nutmeg, caraway seeds, salt and pepper. Fry on high heat and add the roasted nuts. Fry until the Brussels sprouts are slightly golden brown.
