Ingredients

  • 1/2 cup condensed milk
  • 1/4 cup brown sugar
  • 1/4 cup Baileys liqueur
  • 300ml thickened cream
  • 30 x 4cm tart shells

Method

  • Step 1
    In a small saucepan, heat condensed milk and sugar, stirring, until it simmers.
  • Step 2
    Reduce heat and continue stirring while it thickens. Remove from heat and allow to cool.
  • Step 3
    Transfer mixture to the bowl of a stand mixer, or use hand-held beaters, to beat mixture with Baileys and 1/2 cup cream until thick. Spoon or pour into tart shells.
  • Step 4
    Refrigerate to set.
Recipe Notes

You can buy tiny tart shells at the supermarket or in delis. You can also make your own by pre-baking frozen shortcrust pastry circles in a mini muffin tin.

Pipe cream on just before serving. Store tarts in the fridge.
