Brown Lentils With Kabana and Eggs

Ingredients

  • 500 g lentils soaked overnight
  • 12 kabana sausage
  • 6 egg
  • 3 cloves garlic crushed
  • 2 pinches ground black pepper
  • 1/2 cup olive oil
  • 2 stalks shallots *to decorate
  • 1/2 tomato *to decorate
  • 150 ml water
  • 2 tsp cornflour
  • 60 g butter
  • 2 cup water

Method

  • Step 1
    Soak the lentils overnight in 2 cups of water.
  • Step 2
    Strain the lentils and cook in saucepan over medium heat with 2 cups water until soft. Add butter, garlic, season with salt and black pepper, stir and taste.You can use vegeta seasoning as well if you want. Dissolve cornflour in a little cold water and add to lentils mixture to thicken, taste and season accordingly.
  • Step 3
    Heat a little bit of oil in frying pan over medium heat, crack the eggs into eggs ring and slowly cook until set up. Season with salt and black pepper, if you wish.
  • Step 4
    Score the kabana diagonally in a crisscross pattern. In a pan heat a little of bit oil, add kabana and fry until brown.
  • Step 5
    Serve lentils, cabana, eggs on a plate and decorate with shallots and tomatoes.

Recipe Notes
This recipe is cheap, quick, easy and healthy - kids will love it. If you are a lentil lover - you will enjoy this dish. Use cold water to soak the lentils in overnight. I use Hanz Kabana sausages. You can add Vegata seasoning to this dish if you like.
