Ingredients

  • 2 cup mushrooms sliced
  • 200 g broccolini
  • 3 handfuls rocket leaves
  • 1 tsp butter
  • 1 tsp crushed garlic
  • 1/2 tsp sesame seeds

Dressing

  • 2 tbs soy sauce
  • 2 tbs white vinegar
  • 1 tbs honey
  • 3 drops sesame oil

Method

  • Step 1
    Place a small saucepan of water on the stove. Bring to a boil.
  • Step 2
    Slice broccolini into 4cm lengths and add stems to boiling water for 2 minutes, then add florets. Cook till just tender, strain and rinse under cold water to prevent from continuing to cook. Set aside.
  • Step 3
    Return saucepan to stove and add butter and garlic. Add mushrooms and cook until water has evaporated and mushrooms are fragrant.
  • Step 4
    For dressing, place all dressing ingredients into a small jug and mix well.
  • Step 5
    Place rocket in a serving plate, top with garlic mushrooms, add broccolini and drizzle over dressing. Sprinkle with sesame seeds and serve.
