Ingredients

  • 1 bottle oil *for frying
  • 1 head broccoli broken into florets

Batter

  • 1/2 cup plain flour
  • 1 cup beer
  • 2 tbs butter melted
  • 1 pinch salt
  • 1 egg yolk
  • 1 egg white beaten well salted

Method

  • Step 1
    Preheat deep fryer to 205C.
  • Step 2
    In a saucepan filled with lightly salted water, cook broccoli for 4 minutes. Rinse under cold water, drain and set aside. Cut broccoli into 2.5cm in diameter florets.
  • Step 3
    In a bowl, mix batter ingredients together (except egg white) with a wooden spoon, and stir until smooth. Beat egg white into stiff peaks. Gently fold stiffened egg white into the batter.
  • Step 4
    Dip 6 or 7 broccoli florets into the batter and cook in the deep fryer until golden. Remove and drain on a paper towel. Continue with remaining broccoli until all cooked.

  • 1 deep fryer
  • 1 saucepan
Recipe Notes

You can also do this with cauliflower. Beer can be substituted with water.

Serve with tartare sauce, or the sauce of your choice.
