Ingredients

  • 2 egg
  • 1/2 tsp ground pepper fresh
  • 2 tsp capsicum diced
  • 2 tsp leg ham (deli) diced
  • 2 tsp shallots chopped
  • 2 tsp fetta crumbled

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Grease muffin pans with butter.
  • Step 3
    In each muffin pan, place the capsicum, ham and shallots.
  • Step 4
    Break an egg over these ingredients.
  • Step 5
    Sprinkle with freshly ground pepper and feta.
  • Step 6
    Bake for approximately 15 minutes.

  • 1 muffin pan
Recipe Notes
I use a salty, soft feta. You can swap the shallots for finely diced red onion. I serve with a barbeque sauce / sweet chilli sauce mix on the side. If my guests are hungry I will split a Turkish pide and pop into the oven at the end. Leftovers are great with a crunchy salad for lunch.
