No flour, low fat and delicious. A super-easy breakfast for visitors.
Ingredients
- 2 egg
- 1/2 tsp ground pepper fresh
- 2 tsp capsicum diced
- 2 tsp leg ham (deli) diced
- 2 tsp shallots chopped
- 2 tsp fetta crumbled
Method

Step 1Preheat oven to 180C.

Step 2Grease muffin pans with butter.

Step 3In each muffin pan, place the capsicum, ham and shallots.

Step 4Break an egg over these ingredients.

Step 5Sprinkle with freshly ground pepper and feta.

Step 6Bake for approximately 15 minutes.

Recipe Notes
I use a salty, soft feta. You can swap the shallots for finely diced red onion. I serve with a barbeque sauce / sweet chilli sauce mix on the side. If my guests are hungry I will split a Turkish pide and pop into the oven at the end. Leftovers are great with a crunchy salad for lunch.
