Ingredients

  • 160g bread
  • 1 tbs butter
  • 1 egg
  • 1/2 cup milk
  • 3/4 cup plain flour
  • 1 tbs mixed herbs

Method

  • Step 1
    Dice the bread and fry it lightly with the butter.
  • Step 2
    Meanwhile mix the egg and the milk in a small bowl.
  • Step 3
    Combine the bread and egg mixture. Stir in the flour and season with pepper and salt.
  • Step 4
    Add herbs and allow to stand for ½ hour. You may need more milk to soften dough.

  • Step 5
    Dip hands in cold water and roll the dough into a dozen small balls.
  • Step 6
    Put into boiling salted water or stew.
  • Step 7
    Poach them for 10 to 15 minute or until they are light and firm and well risen.
Recipe Notes

You can include fried bacon or cubed pork crackling in the mixture.
