Austrian homemade bread dumpling to go with stews and soups.
Ingredients
- 160g bread
- 1 tbs butter
- 1 egg
- 1/2 cup milk
- 3/4 cup plain flour
- 1 tbs mixed herbs
Method

Step 1Dice the bread and fry it lightly with the butter.

Step 2Meanwhile mix the egg and the milk in a small bowl.

Step 3Combine the bread and egg mixture. Stir in the flour and season with pepper and salt.

Step 4Add herbs and allow to stand for ½ hour. You may need more milk to soften dough.

Step 5Dip hands in cold water and roll the dough into a dozen small balls.

Step 6Put into boiling salted water or stew.

Step 7Poach them for 10 to 15 minute or until they are light and firm and well risen.
Recipe Notes
You can include fried bacon or cubed pork crackling in the mixture.
