A rich beef and mushroom pasta sauce.
Ingredients
- 1 tbs olive oil
- 1 onion finely chopped medium
- 2 garlic clove crushed
- 400 g button mushrooms halved
- 500 g beef mince
- 400 g canned diced tomato
- 100 g tomato paste
- 1/4 cup red wine
- 2 beef stock cube
- 1/2 tsp sugar
- 1 tbs mixed herbs
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 500 g spaghetti
- 1 tbs parmesan cheese
- 1 tsp salt
Method

Step 1Fill a large pot with water and bring to the boil.

Step 2To a frypan add oil, onion, and garlic, and stir until onions are just softened.

Step 3Add beef, breaking up any lumps while cooking for 5 minutes.

Step 4Add mushrooms, herbs, paprika, pepper, sugar and stock cubes, and continue to stir.

Step 5Add tomato paste and cook for 5 minutes over low heat, stirring all the time.

Step 6Add tomatoes and red wine, cover and cook for a further 15 minutes.

Step 7To the pot of boiling water add a pinch of salt and the spaghetti.

Step 8Cook until just al dente.

Step 9Drain spaghetti, mix with the sauce and serve with parmesan cheese.
Recipe Notes
Tomato paste is very strong in flavour so use 1 or 2 sachets as desired. The red wine can be simmered for a minute or so to remove the alcohol.
