Ingredients

  • 1 tbs olive oil
  • 1 onion finely chopped medium
  • 2 garlic clove crushed
  • 400 g button mushrooms halved
  • 500 g beef mince
  • 400 g canned diced tomato
  • 100 g tomato paste
  • 1/4 cup red wine
  • 2 beef stock cube
  • 1/2 tsp sugar
  • 1 tbs mixed herbs
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 500 g spaghetti
  • 1 tbs parmesan cheese
  • 1 tsp salt

Method

  • Step 1
    Fill a large pot with water and bring to the boil.
  • Step 2
    To a frypan add oil, onion, and garlic, and stir until onions are just softened.
  • Step 3
    Add beef, breaking up any lumps while cooking for 5 minutes.
  • Step 4
    Add mushrooms, herbs, paprika, pepper, sugar and stock cubes, and continue to stir.
  • Step 5
    Add tomato paste and cook for 5 minutes over low heat, stirring all the time.
  • Step 6
    Add tomatoes and red wine, cover and cook for a further 15 minutes.
  • Step 7
    To the pot of boiling water add a pinch of salt and the spaghetti.
  • Step 8
    Cook until just al dente.
  • Step 9
    Drain spaghetti, mix with the sauce and serve with parmesan cheese.
Recipe Notes
Tomato paste is very strong in flavour so use 1 or 2 sachets as desired. The red wine can be simmered for a minute or so to remove the alcohol.
