With just 6 ingredients, our mini quiches are called ‘the best’ for a reason. With flaky golden pastry holding a cheesy savoury custard filling, studded with sweet onion and smoky ham, they’re a cinch to make and go down a treat at cocktail parties and picnics – or just as an afternoon snack.

How to make these super-easy mini quiches: key tips

Use a 7cm-round pastry cutter to cut 24 discs from the puff pastry. This will be the perfect size to line each muffin hole. If you don’t have a mini muffin pan, you can use a 12-hole 80ml (½ cup) pan and cook for an extra 5 minutes. When it comes time to add the custard into the lined pans, transfer it to a jug and carefully pour it in.

One of the great things about our mini quiche recipe is that you can customise the filling to your own tastes. Let the cheese you choose be a guide, use mozzarella and swap the ham for salami (you can top the finished quiches with baby basil leaves for entertaining). 

I’m yet to meet someone who doesn’t love quiche, so they’re a pretty safe bet when entertaining. You can serve mini versions for canapes, this elegant crab quiche for an entree or a classic quiche Lorraine partnered with a green salad for a main meal.

Ingredients

  • 5 Woolworths Large Free Range Eggs
  • 130 ml cream
  • 1 tbs onion grated
  • 2.6 sheets puff pastry
  • 1 cup cheese grated
  • 1/2 cup ham (deli) chopped

Method

  • Step 1
    Preheat oven to 210°C.
  • Step 2
    Grease muffin pan.
  • Step 3
    Using a fork, beat eggs, cream, onion, and salt and pepper in a bowl until well-combined.

    Cut and line each muffin hole with pastry.
  • Step 5
    Divide ham and cheese into muffin holes, and spoon in egg mixture.
  • Step 6
    Bake for 20-22 minutes.

Can you make any tweaks to these mini quiches?

Yes, Swiss cheese goes well with bacon – and you can make these quiches vegetarian by using sauteed garlic mushrooms instead of ham. Or, you can use cheddar and swap the sauteed onion for caramelised ones.
