Ingredients

  • 400g Lattice biscuits
  • 2/3 cup custard powder
  • 1/2 cup caster sugar
  • 600ml light cream
  • 3 cups milk
  • 2 tsp vanilla essence
  • 2 tbs gelatine powder
  • 1/2 cup hot water

Method

  • Step 1
    Lightly grease and line a lamington pan with paper. Line base of pan with Lattice biscuits.
  • Step 2
    Combine custard powder, caster sugar and cream in a saucepan, heat over medium temp and stir until sugar has dissolved.
  • Step 3
    Add milk to saucepan and continue stirring until custard is thick and smooth. Remove from heat and add vanilla essence.
  • Step 4
    Dissolve gelatine in hot water and add to custard. Cover with plastic wrap and allow to cool.
  • Step 5
    Spoon custard over biscuit base and then place remaining Lattice biscuits on top. Place in the fridge for one hour or until custard is set.
  • Step 6
    If icing is required, mix icing sugar, butter and passionfruit together, spread over the top and place back in the fridge to set.

Recipe Notes

Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
