Best-ever self-saucing pudding in a mug

Ingredients

  • 1/2 cup self-raising flour
  • 1/3 cup caster sugar
  • 3 tbsp cocoa powder
  • 1/2 cup milk
  • 1 egg
  • 30g butter (2 tbsp), melted

For topping

  • 2 tbsp brown sugar
  • 2 tsp cocoa powder
  • 1/2 cup boiling water

Method

  • Step 1
    Grease two coffee mugs with butter.
  • Step 2
    In a medium bowl, whisk together flour, caster sugar and cocoa powder. Mix milk, egg and melted butter in a jug, then add to dry ingredients and mix until just combined. Divide between prepared mugs.
  • Step 3
    To make topping, combine brown sugar and extra cocoa powder in a small bowl, then distribute evenly over the top of the batter in the mugs. Carefully pour 1/4 cup boiling water onto the top of the first mug. Microwave for 1 1/2 minutes on high. Cake should be cooked through, with liquid sauce underneath. Continue with 10 second bursts if required.
  • Step 4
    Repeat for second mug.
  • Step 5
    Serve with vanilla ice-cream or cream if preferred.
Recipe Notes

It’s difficult to halve an egg, so this recipe is made for 2 serves rather than 1.

The sauce is made by the boiling water combining with the sugary cocoa topping. It sinks to the bottom of the mug as the cake batter cooks.
