Ingredients

  • 275 g plain flour
  • 130 g unsalted butter cubed
  • 1 tbs caster sugar
  • 50 ml cold water
  • 1 cup berry jam

Method

  • Step 1
    In a bowl add the plain flour, sugar and butter.

    Using fingertips, rub the butter into the flour until mixture resembles fine breadcrumbs.
  • Step 3
    Add the water and work the mixture into a smooth ball.
  • Step 4
    Wrap in clingwrap and refrigerate for 30 minutes.
  • Step 5
    Sprinkle flour onto a clean surface and rolling pin and roll out the pastry to approximately 3 mm thickness.
  • Step 6
    Cut circles with a scone cutter or fluted cookie cutter and place into a mini tart oven tray.
  • Step 7
    Push the pastry down gently to make a dent in the middle and then fill the space with 1 teaspoon of jam.
  • Step 8
    Bake at 180C for 15 minutes or until golden.
Recipe Notes

Use jam of choice. The jam is very hot and takes a while to cool so take care when taking the tarts out of the trays. I found getting the pastry off the work surface and onto the tray easier by using a metal egg slide.
