A good recipe for children to try cooking, with some adult help.
Ingredients
- 275 g plain flour
- 130 g unsalted butter cubed
- 1 tbs caster sugar
- 50 ml cold water
- 1 cup berry jam
Method

Step 1In a bowl add the plain flour, sugar and butter.

Step 2Using fingertips, rub the butter into the flour until mixture resembles fine breadcrumbs.

Step 3Add the water and work the mixture into a smooth ball.

Step 4Wrap in clingwrap and refrigerate for 30 minutes.

Step 5Sprinkle flour onto a clean surface and rolling pin and roll out the pastry to approximately 3 mm thickness.

Step 6Cut circles with a scone cutter or fluted cookie cutter and place into a mini tart oven tray.

Step 7Push the pastry down gently to make a dent in the middle and then fill the space with 1 teaspoon of jam.

Step 8Bake at 180C for 15 minutes or until golden.
Recipe Notes
Use jam of choice. The jam is very hot and takes a while to cool so take care when taking the tarts out of the trays. I found getting the pastry off the work surface and onto the tray easier by using a metal egg slide.
