These ribs have that wonderful ‘just barbecued’ flavour, even if they aren’t cooked on the barbie! The combo of sauces and a smoky chilli spice rub do all the hard work for sticky ribs with amazing flavour that are the finger-licking best.

How to make these best-ever BBQ pork ribs: key tips

After sprinkling the spice rub onto your ribs, rub it in a little with your fingertips so that it sticks and the flavour will permeate the meat. Then, when basting your ribs, use a different brush (or wash it between basting) each time you baste so that when you go to serve the remaining sauce with the ribs, you aren’t risking contamination by the brush having touched raw meat.

You can use a barbecue, instead of the oven, to cook these ribs (see the notes, below).

When choosing your pork ribs for this recipe, ensure they are really meaty, so that the meat that’s there will be tender after cooking (if the meat isn’t very thick it will dry out quickly, especially on the barbecue) and your meal will be fulfilling enough.

The smoked paprika in both the spice rub and the basting sauce provide that sublime smoky charred flavour we equate with barbecued meat. The combo of Worcestershire, barbecue and tomato sauces helps, too, while the brown sugar assists in caramelising the sauce, making it deliciously sticky.

Ingredients

  • 1.2kg pork ribs
  • 1/3 cup barbecue sauce
  • 1/3 cup tomato ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp smoked paprika
  • 1/2 cup brown sugar

For spice rub:

  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp ground chilli
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt

Method

  • Step 1
    Preheat oven to 160C fan-forced. Combine all of the ingredients for the spice rub in a small bowl and sprinkle over both sides of the ribs. Place on an oven tray lined with baking paper, meaty side up. Pour 1/3 cup water into the base of the tray, cover the whole thing with foil and bake for 1 hour 15 minutes until tender.
  • Step 2
    Increase oven temperature to 200C fan-forced. Combine sauces, paprika and sugar in a bowl. Remove foil from ribs and turn them over so the meaty side is facing down. Brush sauce liberally over the ribs. Bake for 8 minutes. Turn ribs over and brush again with more of the sauce. Bake a further 8 minutes until sticky and charred.
  • Step 3
    Serve with leftover sauce.

Can I cook these best-ever BBQ pork ribs on a barbecue?

The spice rub and sauce give these oven-baked ribs a charred BBQ flavour, but feel free to cook them on your actual barbecue. Cook low and slow initially to make the meat tender and falling off the bone, then pump up the temperature for the final stage to make them sticky and unctuous.

What can I serve with these best-ever BBQ pork ribs?

You could go for a basic hot chips and green salad, or raise the bar and try corn fritters, a potato salad or tangy coleslaw.
