Ingredients

  • 55 g butter room temperature
  • 170 g caster sugar
  • 1 egg room temperature
  • 125 ml milk
  • 225 g plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 285 g mixed berries fresh

Topping

  • 115 g sugar
  • 45 g plain flour
  • 1/2 tsp ground cinnamon
  • 55 g butter chopped

Method

  • Step 1
    Preheat oven to 190C and grease a 23 x 23 cm baking dish.
  • Step 2
    Using an electric mixer, cream butter with sugar until light and fluffy.
  • Step 3
    Add egg, beat to combine, then mix in the milk until blended.
  • Step 4
    Sift over the flour, baking powder salt and stir just enough to blend the ingredients.
  • Step 5
    Add berries and stir. Pour into baking dish.
  • Step 6
    Topping: Place the sugar, flour and butter in a mixing bowl. Mix until the mixture resembles coarse breadcrumbs.
  • Step 7
    Sprinkle the topping over the mixture in the baking dish.
  • Step 8
    Bake for about 45 minutes or until a skewer comes out clean when inserted.
  • Step 9
    Serve hot or cold.
