Ingredients

  • 1 cup plain flour
  • 1/3 cup cornflour
  • 1 egg yolk
  • 1 cup Victoria Bitter beer
  • 350g cauliflower cut into florets
  • 1 bottle oil for frying
  • 1 lemon cut into wedges *to serve
  • 1 cup tartare sauce *to serve
  • 1 pinch sea salt *to serve

Method

  • Step 1
    Whisk together the flours in a large bowl. Make a well in the centre. Add the yolk. Gradually pour in the beer, whisking constantly, until a smooth batter forms.
  • Step 2
    Pour enough oil to come one-third of the way up the side of a wok or large saucepan. Heat over high heat until a cook’s thermometer reaches 180C. Add the cauliflower to the batter and stir well to coat.
  • Step 3
    Add half of the cauliflower to the oil and cook for 3 minutes or until golden. Transfer to a rack placed over a baking tray. Repeat with the remaining cauliflower.
  • Step 4
    Sprinkle with salt and serve with tartare sauce and lemon wedges.
