Forget fries – these crispy vegetarian beer battered cauliflower bites make perfect finger food.
Ingredients
- 1 cup plain flour
- 1/3 cup cornflour
- 1 egg yolk
- 1 cup Victoria Bitter beer
- 350g cauliflower cut into florets
- 1 bottle oil for frying
- 1 lemon cut into wedges *to serve
- 1 cup tartare sauce *to serve
- 1 pinch sea salt *to serve
Method

Step 1Whisk together the flours in a large bowl. Make a well in the centre. Add the yolk. Gradually pour in the beer, whisking constantly, until a smooth batter forms.

Step 2Pour enough oil to come one-third of the way up the side of a wok or large saucepan. Heat over high heat until a cook’s thermometer reaches 180C. Add the cauliflower to the batter and stir well to coat.

Step 3Add half of the cauliflower to the oil and cook for 3 minutes or until golden. Transfer to a rack placed over a baking tray. Repeat with the remaining cauliflower.

Step 4Sprinkle with salt and serve with tartare sauce and lemon wedges.
