Ingredients

  • 1 leek sliced washed
  • 420 g red canned kidney beans drained
  • 400 g canned diced tomato
  • 2 tsp Italian dried mixed herbs
  • 2 tbs parmesan cheese
  • 1 tbs Worcestershire sauce
  • 1 beef stock cube crumbled
  • 1 cup tomato soup
  • 1 tbs oil
  • 250 g penne cooked

Method

  • Step 1
    Heat oil in large frying pan. Add leeks and cook for 2 minutes.
  • Step 2
    Add pasta and cook until very lightly browned.
  • Step 3
    Add herbs and beef cube. Stir.
  • Step 4
    Add sauce, diced tomatoes, soup, salt, pepper and kidney beans.
  • Step 5
    Stir until combined and heated through. Add Parmesan, stir and serve.
Recipe Notes
This goes well with home made crusty bread.
