This is great cooked on the BBQ or you could serve it on a crunchy French bread stick for starters. - SarahM

Ingredients

  • 2 onions large
  • 3 zucchinis medium
  • 2 tomatoes large
  • 1/2 cup oil
  • 2 tbs garlic salt
  • 2 tbs dried basil leaves

Method

  • Step 1
    Grate or chop the onions, zucchini and tomatoes.
  • Step 2
    Place into a sealable container along with the oil, garlic salt and basil.
  • Step 3
    Shake the container until all ingredients are coated with oil and seasonings.
  • Step 4
    Grill on the barbeque.
Recipe Notes

The V-Slicer is great for doing this dish.

Leeks, spring onions or red capsicums would also work well.

For something different I added some curry powder as well as the garlic powder.
