This is great cooked on the BBQ or you could serve it on a crunchy French bread stick for starters.
Ingredients
- 2 onions large
- 3 zucchinis medium
- 2 tomatoes large
- 1/2 cup oil
- 2 tbs garlic salt
- 2 tbs dried basil leaves
Method

Step 1Grate or chop the onions, zucchini and tomatoes.

Step 2Place into a sealable container along with the oil, garlic salt and basil.

Step 3Shake the container until all ingredients are coated with oil and seasonings.

Step 4Grill on the barbeque.
Recipe Notes
The V-Slicer is great for doing this dish.
Leeks, spring onions or red capsicums would also work well.
For something different I added some curry powder as well as the garlic powder.
