Ingredients

  • 1 1/2 cups plain flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 tbs sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbs butter
  • 3 bananas mashed overripe

Method

  • Step 1
    Sieve the dry ingredients into a medium mixing bowl.
  • Step 2
    Make a well in the centre of flour, add blended milk and butter, and egg. Mix well.
  • Step 3
    Mash bananas with a fork, add to the mixture and fold in.
  • Step 4
    Cook pancakes in a pre-heated, lightly oiled frypan until bubbles rise in the surface.
  • Step 5
    Turn and cook the other side.
  • Step 6
    Serve with a sprinkle of caster sugar.
Recipe Notes

Use 1 cup milk for thick pancakes and 1½ cups for thin.

Use butter or margarine.

Can you use over-ripe bananas for pancakes?

These pancakes are perfect for using up any over-ripe bananas! Just make sure they're well-mashed before adding them to the pancake mixture.

How do I make my pancakes fluffy?
