An unusual taste with the bananas and dates.
Ingredients
- 250 g pitted dates chopped
- 1 1/4 cups water
- 90 g butter
- 1/2 tsp bicarbonate of soda
- 2 cups self-raising flour
- 1 1/2 tsp ground cinnamon
- 1/2 cup coconut
- 2 eggs lightly beaten
- 2 bananas large mashed
Method

Step 1Place dates, water and butter in a pan. Cook over a medium heat, stirring occasionally, until the butter has melted. Remove from heat and cool slightly. Stir in bicarbonate of soda.

Step 2Sift flour and cinnamon into a bowl, stir in the coconut. Make a well in the centre.

Step 3Add date mixture, eggs and bananas. Fold through dry ingredients until combined.

Step 4Spoon mixture into a greased muffin pan. Bake at 180C for 25-30 minutes or until cooked when tested with a skewer.

Step 5Stand muffins in pan for about 5 minutes before turning onto a wire rack to cool.
