Ingredients

  • 250 g pitted dates chopped
  • 1 1/4 cups water
  • 90 g butter
  • 1/2 tsp bicarbonate of soda
  • 2 cups self-raising flour
  • 1 1/2 tsp ground cinnamon
  • 1/2 cup coconut
  • 2 eggs lightly beaten
  • 2 bananas large mashed

Method

  • Step 1
    Place dates, water and butter in a pan. Cook over a medium heat, stirring occasionally, until the butter has melted. Remove from heat and cool slightly. Stir in bicarbonate of soda.
  • Step 2
    Sift flour and cinnamon into a bowl, stir in the coconut. Make a well in the centre.

  • Step 3
    Add date mixture, eggs and bananas. Fold through dry ingredients until combined.
  • Step 4
    Spoon mixture into a greased muffin pan. Bake at 180C for 25-30 minutes or until cooked when tested with a skewer.
  • Step 5
    Stand muffins in pan for about 5 minutes before turning onto a wire rack to cool.

Use butter or margarine.
