Ingredients

  • 8 loin lamb chops
  • 2 slices sourdough bread, broken up
  • 1 small bunch parsley
  • 2 eggs, whisked
  • Seasoned flour, to coat
  • Dressing
  • 1 small bunch parsley, chopped
  • 1 teaspoon capers
  • 1 lemon, juice
  • 1/4 cup olive oil

Method

  • Step 1
    Place day old sourdough and one small bunch parsley in food processer, pulse to create crumbs.
  • Step 2
    Dip chops in flour, then egg, then roll in breadcrumbs.
  • Step 3
    Shallow fry in olive oil until cooked through.
  • Step 4
    Dressing: Combine parsley with oil, lemon and capers.
  • Step 5
    Serve chops immediately drizzled with a little dressing.
Recipe Notes
I served this with a cauliflower and potato mash and minted peas and it was a major hit.
