Beautiful flavour and crunch.
Ingredients
- 8 loin lamb chops
- 2 slices sourdough bread, broken up
- 1 small bunch parsley
- 2 eggs, whisked
- Seasoned flour, to coat
- Dressing
- 1 small bunch parsley, chopped
- 1 teaspoon capers
- 1 lemon, juice
- 1/4 cup olive oil
Method

Step 1Place day old sourdough and one small bunch parsley in food processer, pulse to create crumbs.

Step 2Dip chops in flour, then egg, then roll in breadcrumbs.

Step 3Shallow fry in olive oil until cooked through.

Step 4Dressing: Combine parsley with oil, lemon and capers.

Step 5Serve chops immediately drizzled with a little dressing.
Recipe Notes
I served this with a cauliflower and potato mash and minted peas and it was a major hit.
