Ingredients

  • 3 cup self-raising flour
  • 3/4 cup caster sugar
  • 3 banana
  • 3/4 cup milk
  • 2 egg
  • 125 g margarine cubed
  • 200 g dark chocolate chips
  • 50 g dark chocolate chips
  • 3 tbs icing sugar
  • 2 tbs drinking chocolate powder

Method

  • Step 1
    Sift flour and sugar into large bowl.
  • Step 2
    Peel and mash bananas using a fork.
  • Step 3
    Add to the flour mixture.
  • Step 4
    Combine milk and eggs in a jug, mix with fork and add to the flour / banana mixture. Stir.
  • Step 5
    Place margarine in a microwave-safe dish and melt for 50 seconds on medium-high. Add to flour mixture, stir until combined.
  • Step 6
    Add chocolate chips to mixture and stir in.
  • Step 7
    Drop heaped tablespoonfuls of mixture into a well-greased muffin pan. Top muffins with extra chocolate chips.
  • Step 8
    Bake at 190C for approximately 20 minutes.
  • Step 9
    Turn from pan onto wire rack to cool.
  • Step 10
    Dust with icing sugar and chocolate powder.
Recipe Notes

Can be reheated in the microwave for 20 seconds and served with hokey pokey ice cream.
