A deliciously light and moist cake.
Ingredients
- 185 g self-raising flour
- 100 g sugar
- 125 g butter
- 2 egg beaten well
- 4 banana mashed ripe
- 2 tsp lemon juice
Icing
- 185 g icing sugar sifted
- 60 g butter
- 1 tsp lemon rind
- 2 tsp lemon juice
- 1/2 cup walnuts *to decorate
Method

Step 1Cream butter and sugar together.

Step 2Gradually add eggs. Mix well.

Step 3Stir in the mashed banana mixed with lemon juice.

Step 4Fold in the sifted flour.

Step 5Place in a 20 cm cake tin. Bake at 175C for approximately 40 minutes.

Step 6Cake is ready when it springs back. Leave to cool on a wire rack. Ice when cold.

Step 7Icing: Cream together icing sugar, butter, extra lemon juice and lemon rind.
Recipe Notes
Walnuts can also be sprinkled on top of the icing if you like. I won first prize at my local show for this recipe.
