How to make this baked honey mustard chicken: key tips
Start by browning all of your chicken pieces so that you seal in their amazing juices and the chicken will remain succulent while baking. Then it’s just a matter of whisking together all of the remaining ingredients and placing everything in the casserole dish to bake.
Basting every now and again will ensure that any chicken poking out of the sauce is treated with those delicious mustard and honey flavours.
The cooking time may differ depending on the chicken pieces you are using. Any with the bone in may require extra cooking time.
Key ingredients in this baked honey mustard chicken recipe
Drumsticks and chicken thighs with the skin on are used in this recipe, however you can use whatever chicken pieces you like such as chicken Marylands or boneless fillets. You could even ask your butcher to joint a whole chicken for you.
The cook uses two types of mustard, wholegrain and Dijon, for the sauce. Wholegrain mustard gives the dish a delightful texture and a pronounced mustard bite, while Dijon is smooth and offers a bold and tangy element.
Sour cream cuts through the richness of this bake, but you could always swap it for cream, if you like.

Ingredients
- 1 tbsp olive oil
- 4 chicken thighs (skin on)
- 4 chicken drumsticks
- 1/4 cup honey
- 1/4 cup seeded mustard
- 1 tbsp Dijon mustard
- 1/2 cup Woolworths Sour Cream
- 1/2 cup chicken stock
- 1/2 tsp sweet paprika
- 1 clove garlic, crushed
- 3 sprigs thyme

Step 1Preheat oven to 180C.

Step 2Heat oil in a large frypan over medium heat. Season chicken pieces with salt and pepper and brown well on all sides. Place in a casserole dish in a single layer.

Step 3Whisk together remaining ingredients in a jug and pour over chicken. Bake for 30 minutes, basting every 10 minutes, until chicken is cooked through and sauce has reduced and thickened slightly.

Do I need the herbs in this baked honey mustard chicken?
Everything is so rich in this dish that I find fresh herbs are a nice addition. Thyme is lovely with chicken, but you could also try fresh tarragon, rosemary or oregano. If you have these growing in your garden, all the better!
Can I keep the leftovers of this baked honey mustard chicken?
Any leftovers will last very well in an airtight container in the fridge for up to 3 days and you will find that the flavours will develop further. You can simply reheat it in portions in the microwave.
