A perfect wake-me-up breaky.
Ingredients
- 1 tbs olive oil
- 300 g canned baked beans drained
- 6 cherry tomato halved
- 1/4 cup cheese grated
- 2 eggs
- 1 garlic clove crushed
- 1/2 cup milk
Method

Step 1Preheat oven to 200C. Lightly grease a 12 hole muffin pan with olive oil.

Step 2Place bread slices in tray, pressing down into hole.

Step 3Add baked beans to cups.

Step 4Whisk eggs, garlic and milk together in a small bowl. Pour mixture over each cup.

Step 5Sprinkle each cup with cheese and cook for 25 minutes, or until bread is crisp and filling is set and golden brown.

- 1 12-hole muffin pan
Recipe Notes
I added some dried parsley to the egg and milk mix to give it a nice look.
This recipe can be low fat by using low fat milk and cheese.
