Ingredients

  • 5 eggs
  • 1/2 cup low-fat milk
  • 1/2 cup self-raising flour
  • 1/2 cup low-fat tasty cheese
  • 1/2 cup bacon diced
  • 2 cups mixed vegetables diced
  • 1/4 cup basil shredded
  • 1 pinch salt and pepper to taste

Method

  • Step 1
    Preheat oven to 180C.

  • Step 2
    Whisk eggs with milk in a large bowl. Add self-raising flour to the mixture, then add mixed vegetables, bacon and herbs.
  • Step 3
    Season with salt and pepper.
  • Step 4
    Mix ingredients until combined and pour into prepared lined and greased pan.
  • Step 5
    Bake for 30-35 minutes until golden and firm.
  • Step 6
    Cool in pan. Cut into slices and serve with salad.
Recipe Notes

I use whatever vegetables I have in the fridge or freezer at the time. I like to use capsicum, zucchini, carrot, onion and tomato along with peas and corn.

I also use crumbled fetta instead of tasty cheese if I feel like a change.
