A great recipe for the whole family. Really healthy and tasty which can be varied to suit your taste buds. It is so simple and easy to make and you will find all the ingredients in your fridge and cupboard. Great for lunch and dinner.
Ingredients
- 5 eggs
- 1/2 cup low-fat milk
- 1/2 cup self-raising flour
- 1/2 cup low-fat tasty cheese
- 1/2 cup bacon diced
- 2 cups mixed vegetables diced
- 1/4 cup basil shredded
- 1 pinch salt and pepper to taste
Method

Step 1Preheat oven to 180C.

Step 2Whisk eggs with milk in a large bowl. Add self-raising flour to the mixture, then add mixed vegetables, bacon and herbs.

Step 3Season with salt and pepper.

Step 4Mix ingredients until combined and pour into prepared lined and greased pan.

Step 5Bake for 30-35 minutes until golden and firm.

Step 6Cool in pan. Cut into slices and serve with salad.
Recipe Notes
I use whatever vegetables I have in the fridge or freezer at the time. I like to use capsicum, zucchini, carrot, onion and tomato along with peas and corn.
I also use crumbled fetta instead of tasty cheese if I feel like a change.
